French fries are not a vegetable
Americans love shortcuts. But when it comes to vegetables - and indeed, healthy eating - there really are none. Feeding our children french fries in the school cafeterias does not constitute a healthy serving of vegetables. Why? First, because anything that is deep fried is unhealthy; but more importantly, because potatoes are a starch, and even though they come from the earth, they have precious little fiber to speed passage through the gut, which is one of the hallmarks of vegetables.
