Delicious - and Healthy Sweet Potato Casserole

I learned late in life to enjoy sweet potatoes.  With the upcoming holiday season, sweet potatoes feature prominently on many menus.  There are many light versions of sweet potato casseroles offered online and in books and magazines.  I would like to offer my own, with some suggested substitutions:

Version 1
Ingredients:
3 lbs. sweet potatoes, peeled and cut
1 can pineapple bits in its own juice
A sprinkling of salt and pepper
Cinnamon and ground cloves to taste

Preparation:
Boil peeled potatoes in salted water until tender, about 30 minutes.  Then place in a large bowl, and mash coarsely.  Add a pinch of salt and pepper, and the can of pineapple bits.  Mix well.  Transfer to a casserole dish, and sprinkle cinnamon and ground cloves over top.  Bake at 350 for about 25 minutes.

Version 2
Ingredients:
3 lbs. sweet potatoes
1/2 c. Southern Comfort liquor
1 can pineapple bits in its own juice
1/2 c. raisins
1/2 c. orange juice
1/2 tsp. lemon rind
Cinnamon

Preparation:
Roast washed sweet potatoes at 350 until tender, about 1 hour.  Place into a deep bowl, and mash coarsely.  Add the other ingredients, except the cinnamon and mix well.  Place into a casserole, and sprinkle with the cinnamon.  Bake at 350 for 30 minutes, until the aroma makes you faint.

To be sure, there are about as many variations on a them as there are imaginations.  Consider "sweetening" your casserole by mixing some shredded natural coconut, for a pina colada flavor from the Caribbean.  Also, roast pecans or almonds can be mixed within the casserole, as well as sprinkled over top.  Instead of raisins, my personal preference are dried cranberries, which provide a slight tartness to cut through the very sweet flavor of the sweet potatoes.  Above all, experiment to your heart's content.  I find sweet potatoes plenty sweet enough without the addition to extra sweeteners of any kind, but merely adding cinnamon, and perhaps a teaspoon of vanilla extract would simply render the dish divine.  Such additions as orange juice, pineapple bits, and shredded coconut are merely gilding the lily.  Enjoy!
